Preparation

Rinse the cheackpeas and let them soak in cold water for 8-12 hours. Drain and rinse them. Immerse them in plenty of cold water, bring to a boil and cook over moderate heat for about 120 minutes. In a pressure cooker, 45 minutes from the start of the whistle. Salt must be added at the end of preparation. Times may change depending on experience and personal taste.
