Select Cous Cous is obtained only from Italian durum wheat semolina. The semolina is mixed with water to obtain the characteristic grains. It is then steamed, dried and finally cooled. A typical food of North Africa and of the gastronomic tradition of some areas in Italy, western Sicily and south-western Sardinia, it has now become very common in all cuisines.
