Barley is a very ancient cereal originating from the Asian continent which is still widely used today, from breakfast to dinner. By depriving it of the outermost part, pearl barley is obtained, which is almost white in color.
Select barley is grown on the hills of northern Lazio and Tuscany and belongs to the Valerie and Metaxa varieties. It is a very nutritious cereal and is highly digestible.
