Preparation
Rinse the chickpeas and leave them to soak in cold water for 8-12 hours. Discard the water and rinse them. Immerse them in plenty of cold water, bring to the boil and cook over moderate heat for about 150 minutes. In a pressure cooker, 45 minutes are enough from the start of the whistle. Add salt when cooked. Times may change depending on experience and personal taste.
